Simple but true – make these well and you are almost a chef!
Tips: Use butter, and don’t put the eggs in until it stops
bubbling and making a noise
Only whisk up the eggs very slightly – 5 twists
Tip the pan and pull the hardening bits to the middle
Flip over in half, cook for 1 more minute, then turn out

 This is a bit counter intuitive. We usually throw more resource at a situation when it goes wrong. Professional kitchens stop, let the chefs catch up, apologise to their waiting customers (in order of service, not shouting or moaning level), offer free drinks and wait until the storm subsides. How many of you could benefit from that sort of thnking and action in your organisations?
